Pumpkin Spice Cookies

Ummm, what about those of us who love it all year round? I mean, they sell canned pumpkin in stores all the time, so why would we stop talking about it after Thanksgiving?

I recently made my pumpkin smoothie and had some leftover pumpkin. Instead of another smoothie, I decided I needed cookies. Like, right away.

But I wanted a recipe that was free of gluten (duh), eggs, dairy and white sugar (of course). So I googled away and stumbled upon this recipe. It looked pretty good, but called for coconut flour (like many Paleo/AIP recipes do). I didn’t have coconut flour and quite frankly, I’m not a huge fan of baked goods with coconut flour. I always find them a bit crumbly and dry (it’s probably something I’m doing wrong, but whatever). Not something I look for in a cookie. So since I had almond flour on hand, I made some tweaks. I’m pretty pleased with how they came out. So pleased that there are only 3 left…

-1 1/2 cups canned pumpkin
-1 cup unsweetened shredded coconut
-1/3 cup coconut oil, melted
-1 cup almond flour
-1 tsp cinnamon
-1/2 tsp ginger
-1/2 tsp nutmeg (optional)
-1 tsp vanilla extract
-1/3 cup pure maple syrup


Preheat oven to 350 degrees F and line cookie sheet with parchment or wax paper.

Put all ingredients into a food processor or blender (I used my NutriBullet) and process until well blended.

Using a tablespoon, scoop out batter and swirl top of each cookie with spoon (to resemble the cookie in the photo).

Bake for 30 minutes, turn off the oven and allow the cookies to rest for an additional 15 minutes (in the oven). Remove and let cool on rack or countertop.

Store covered to maintain chewiness. If you like a harder cookie, leave uncovered.
